Special o generous wines
Special o generous wines contain a wide variety of wines such as sweet wines, mistelles, rancid wines, mass wines and generous wines.
These wines have a higher degree, between 14 and 23 ° and can be obtained in two basic ways: one is by adding alcohol to the must before fermentation. And the other by stopping the fermentation with the addition of alcohol, getting a dumb wine.
Alcohol addiction can be with ethyl alcohol or wine alcohol from other wines or brandy. With prolonged aging a generous dry wine is achieved, and by fermentation stop the residual sugars are retained and a sweet sweet wine is obtained. Different types of generous wines are: liqueur wines, liqueur wines or fortified wines: they are sweet generous wines with a sugar content higher than 50 g / l. Another is the generous liqueur wines: they are sweet generous wines with a sugar content higher than 100 g / l. We will also find dry liqueur wines: they are generous dry wines that with a prolonged aging have a characteristic aroma.
Generous wines hold up well thanks to their alcohol and sugar content in the case of generous sweets. They are even stable once the bottle is opened. For this reason it was a type of wine suitable for export, historically highlighting the wines exported from Porto and Madeira to the United Kingdom, and from Catalan ports to America.
