Once vinified, the wine rests for 9 months in concrete vats underground and 1 year in oak barrels.
Harvesting is done by hand in 15 kg boxes. In the winery, the fermentation is carried out in vats with controlled temperature.
The grapes of this wine come from traditional varieties of the Empordà, Grenache and Carignan.
The grapes are selected from among the oldest properties on the property , between 50 and 80 years old, at the same time as the harvest.
