Pardelasses is a red wine from DOQ Priorat, made with a careful selection of grapes from the Garnatxa and Carignan< varieties.. This coupage, typical of the region, provides a unique aromatic and gustatory complexity, the result of the slow and concentrated ripening of the grapes in the Mediterranean climate of the Priorat.
The vinification of Pardelasses is carried out in small family winery Aixalà Alcait, located in Torroja del Priorat. The grapes, from old vines planted in licorice soils, are harvested manually at the optimal moment of maturation.
Once in the cellar, alcoholic fermentation is carried out in stainless steel tanks with native yeasts, thus preserving the typical of the terroir. Subsequently, the wine ages for 13 months in French and American oak barrels of different roasts, providing spicy and roasted notes that integrate harmoniously with the fruit.
Finally, the wine rests in the bottle for 6 months before be commercialized.
To the eye, Pardelasses presents an intense ruby color with violet reflections. On the nose, it highlights a complex aroma of ripe black fruits (mulberry, cherry), spicy notes (clove, black pepper), toast and a subtle mineral background characteristic of Priorat wines. On the palate, it is a voluminous wine, with mature and integrated tannins that provide structure and persistence. Black fruit is the protagonist, accompanied by spicy and mineral notes.
