Valdelacierva Reserva is a red wine from Rioja made 100% with the Tempranillo "hare's eye" variety from vineyards located in Sant Vicenç de la Sonsierra. This wine stands out for its complexity and elegance, the result of a meticulous production process and a careful selection of grapes.
Valdelacierva Reserva vinification begins with a pre-fermentative maceration at a low temperature (4ºC) for 24 hours, which allows the finest aromas to be extracted from the grapes.
Subsequently, an alcoholic fermentation is carried out at a controlled temperature (25ºC) with native yeasts, thus respecting the varietal character of Tempranillo. Malolactic fermentation takes place entirely in French oak barrels, giving the wine a creamy texture and spicy notes.
Valdelacierva Reserva is aged for 26 months in new and one-year-old French oak barrels, where the wine acquires complexity and structure.
After this period, the wine ages in bottle for a minimum of 12 months before being marketed.
In the glass, the Valdelacierva Reserva presents an intense cherry red color, with garnet reflections.
On the nose, a complex and balanced aroma stands out, with notes of ripe black fruit (cherry, blackberry), minerals (graphite), spices (cinnamon, black pepper) and toast, contributed by aging in barrels.
On the palate, it is a wine with body, ripe tannins and a balanced acidity that gives it freshness and persistence. The finish is long and elegant, with notes of roasts and candied fruit.
