This wine, originally of the Protected Designation of Origin (PDO) of Jumilla, is a clear exponent of the varietal expression of Monastrell, one of Spain's most emblematic autochthonous varieties.
The vinification of this wine is characterized by a careful process that begins with a manual harvest in 150 kg boxes. This method allows delicate handling of the grapes, preserving their quality as much as possible.
Subsequently, the grapes are subjected to a pre-fermentative cold maceration for 48 hours, a process that extracts the varietal aromas and favors the freshness of the wine Alcoholic fermentation takes place in stainless steel tanks at a controlled temperature (no higher than 26ºC), in contact with the skins of the grapes in order to extract color, tannins and aromas.
