A Grenache from the Valencian highlands that, in the words of Toni Sarrión, its creator, is a survivor. Planted by Toni and his father at the end of the 80s, it fell into oblivion until 2008, a bad year, when Grenache managed to show its face. After five years of testing, it was decided to launch it on the market under a sober and simple label: La Garnatxa de Mustiguillo.
Manual harvest. Cold maceration in vintage boxes. Double selection table of grapes and berries, destemmed and lightly trampled. Fermentation in 80 hl oak vats with 20% of its own raspón, added manually in thin layers to the incubation, for 10 days, working only with pigeages. Post-fermentative maceration of another 8 days, manually discovered by gravity, using only flower wine. Aged 10 months in French oak barrels.
Paired with: Lamb, small game, mountain rice, mild stews, fatty fish.
