Elaboration and aging
Double selection: in a first selection, the grapes are harvested manually, primarily selecting the highest quality, preferably from the part bottom of the vine.
Arriving at the winery, a second selection is made in the selection table. The vinification is carried out in small stainless steel tanks, with long macerations and controlled fermentation.
