The Sadurní Oliver Pinot Noir is a monovarietal brut nature rosé cava made from the Pinot Noir grape.
This sparkling wine stands out for its elegance, freshness and aromatic complexity, the result of a meticulous elaboration process that respects the raw material.
The production of this cava begins with a short-term skin maceration (3 hours) that provides the must the characteristic pink color of the variety.
Subsequently, the must ferments for 25 days in stainless steel tanks at a controlled temperature to preserve the fruit and freshness.
Once the first fermentation is complete, it is begins the traditional process of the traditional method, with a second fermentation in the bottle and a long aging in the cavas of the house.
Visually, the cava has a pale pink color, bright and clean.< br/>
On the nose, an intense and complex aroma stands out, with notes of fresh red fruits such as blackberry and strawberry, combined with subtle floral touches of rose.
In the mouth, the bubble is fine and persistent, providing a creamy and elegant sensation. The flavor is balanced, with lively acidity that gives it freshness and a minerality that gives it depth.
The finish is long and persistent , with memories of red fruit and a slight bitter touch that adds complexity.
