The "Castell d'Or Brut Orgànic" cava is a sparkling wine of great finesse, made following the traditional method from a classic blend of indigenous varieties Xarelò (40%), Macabeo (30%) and Parellada (30%). This cava, certified as organic, is the result of a meticulous production process that fully respects the environment and the winemaking traditions of the DO Cava.
The basis of this cava is in the careful selection of grapes from vineyards grown under organic farming standards. Once harvested, each variety ferments separately in stainless steel tanks at a controlled temperature.
Subsequently, the coupage is made and bottled to start the second fermentation in the bottle, a key process for obtaining the bubbly and aromatic characteristics of cava. For a minimum of 15 months, the bottles rest in rime, in contact with the fine lees, favoring the complexity and elegance of the final product.
To the eye, it is presented with a yellow color pale, bright and with a fine and persistent crown of bubbles.
On the nose, an expressive aroma of ripe white fruit (pear, apple), cirique and notes stands out floral of orange blossoms and grass.
In the mouth, it is balanced, with a fresh and fruity entry, followed by a creamy body and a vibrant acidity that gives it great persistence .
The finish is long and elegant, with notes of brioche and dried fruit.
