An exceptional wine resulting from oxidative aging and successive thinning.
This wine is the result of a traditional and slow production process, characterized by oxidative aging in 500 liter barrels for more than a decade. This system, known as solère and criaderas, consists of a series of superimposed casks, where the older wine (sólère) is transferred to the lower casks (criaderas) and refilled with younger wine. In this specific case, the base wine is a mixture of red varieties that, over time, has been enriched with white muscat, giving it a unique aromatic complexity.
Complex sensory profile and evolved.
To the eye, the wine presents dark amber hues, with golden reflections, typical of rancid wines.
On the nose, it highlights a intense and complex aroma, with notes of dried fruit (raisins, figs), honey, toffee, roasted coffee and spices, which clearly evoke rancid wines.
In the mouth, the sweetness is intense and concentrated, with a perfect balance between acidity and alcohol. The texture is unctuous and persistent, with a long and pleasant finish, which leaves a warm and enveloping sensation on the palate.
The production of this wine is very limited, already that only about 200 50 liter bottles can be obtained annually. This low production is due, on the one hand, to the low performance of the solere and criaderas system and, on the other hand, to the desire to maintain the highest quality of the product.
