Description Alta Alella special wine Dolç Mataró

The Alta Alella Dolç Mataró is an organic sweet red wine, made from the classic indigenous variety Mataró (Monastrell), with Denomination of Origin Alella. This monovarietal coupage is distinguished by its fruity expression, a move away from the traditional oxidative elaborations that once characterized sweet wines.
Its aromatic and gustatory complexity, along with a refreshing acidity, make it a unique and versatile wine , ideal for innovative pairings.

The Mataró grapes, from organic vineyards, are harvested at the optimal moment of ripening to preserve the maximum aromatic expression.
After a careful selection grain by grain, the grapes begin a pellicular maceration process in stainless steel vats for six months.
During this phase, regular pickings are carried out to extract the aromatic and coloring components from the skins.
Subsequently, the must ferments and macerates with the skins for an additional period. Finally, a soft pressing is carried out and the wine completes its aging in French oak barrels for two months.

To the eye it is Intense picota cherry color with reflections violacis.

In a complex and elegant nose, with a predominance of candied black fruit (plum, dried fig, blackberry) and spicy notes (black pepper).
Subtle floral aromas (violet) also appear. and a mineral background that adds complexity.

In the mouth it has a voluminous and unctuous entry, with a marked expression of ripe black fruit.
The tannins are present but soft, providing structure and persistence.
The refreshing acidity balances the natural sweetness of the grape, giving the wine great length in the mouth.

This sweet wine is very versatile at the table.
Pairs excellently with cooked and blue cheeses, foie gras, fruit-based desserts, dark chocolate and artisan ice creams.
It can also accompany oriental dishes such as lacquered duck or curry lamb.

A serving temperature of between 16 and 18 ºC is recommended.
