This privileged location, with calcareous soils and a northern exposure, gives the grapes a unique minerality and complexity, which are transmitted to the wine in an extraordinary way.
Vinification is carried out following the principles of viticulture ecological and regenerative, respecting the natural cycles of the vineyard and preserving biodiversity.
After manual harvesting, the must ferments spontaneously in stainless steel tanks and ages on its own lees for 8 months, a process that it gives the wine volume, complexity and a creamy texture.
In the glass, Cantallops presents a pale yellow color with greenish reflections.
Al nose, an intense and complex aroma stands out, with notes of ripe white fruit (pear, apple), white flowers, aromatic herbs and subtle mineral and brioche touches.
