Made exclusively in exceptional vintages, Equilibri is a monovarietal white wine from Xarel·lo that reflects the uniqueness of the Sant Jaume vineyards in Pacs del Penedès. Planted in 1948, these hundred-year-old vines, located at a considerable altitude, give the grapes a unique aromatic concentration and natural acidity, essential for the production of this complex and persistent wine.
Vinification de l'Equilibri is a meticulous combination of tradition and innovation.
The manual harvest, divided into two parts, allows to obtain musts with different aromatic profiles.
The first part, gently pressed and fermented in stainless steel with yeasts natives, brings freshness and fruitiness.
The second part, subjected to a short film maceration, brings complexity and structure.
The joint aging in 300 liter French oak barrels, for a minimum of two years, with periodic soakings of the wine from the first harvest, gives the wine a great harmony and a remarkable aging potential.
In the glass, the Equilibri presents a color golden yellow with greenish reflections.
The nose is complex and evocative, with notes of candied fruit (quince, apricot), honey, spices (cinnamon, vanilla) and toast, on a mineral background and floral.
