Vinomi is a white wine from Penedès. Made mainly from white Xarel·lo (65%), a native variety of the area, and a smaller percentage of Red Xarel·lo (35%), a genetic mutation of the former. The vines are located in plots of high quality known as "Triangle", "Pupurri", in La Pineda, and "La Carretera" in Bellver.
The harvest is carried out manually to select the grapes at their optimal moment of maturation.
A distinctive aspect of this wine is the prefermentative cold maceration of the skins, especially of Xarel·lo Vermell, which allows to extract a greater aromatic complexity and color.
Alcoholic fermentation is carried out in stainless steel tanks with selected native yeasts, and is then aged on lees for four months with regular batonnages.
This process provides volume and complexity in the wine.
On the nose, an intense and complex aromatic profile stands out, with notes of tropical fruit (banana, pineapple) contributed by Xarel·lo Vermell, together with floral aromas (orange blossom) and citrus (grapefruit).
