Pardelasses Blanc is a monovarietal white wine made from Garnatxa Blanca grapes from our own vineyards of Celler Aixalà Alcait, located in the heart of the Priorat Qualified Designation of Origin. This white wine, produced under the principles of biodynamics, reflects the minerality and complexity of the area's calcareous and ferruginous soil.
Granatxa Blanca grapes, hand-harvested at the optimal time of ripening , are vinified naturally, without the addition of exogenous yeasts.
Alcoholic fermentation takes place in stainless steel tanks and wooden barrels, where the wine ages for nine months. This aging on lees brings complexity and texture to the wine, without masking its fresh and mineral fruit.
To the eye it presents a pale yellow color with greenish reflections.< br/>
On the nose, an intense and complex aroma stands out, with notes of ripe white fruit (pear, apple), white flowers (jasmine), minerals (leafy stone) and light touches citrus.
In the mouth, it is a wine with a fresh and lively entry, with a balanced acidity that gives it great length. Its texture is unctuous and creamy, with a persistent and mineral finish.
This white wine is ideal to accompany grilled fish dishes, seafood, rice dishes, pasta with light sauces and soft cheeses. . It also pairs perfectly with appetizers and vegetarian dishes.
