El José Pariente "Las Comas" is a monovarietal white wine from Verdejo ecological, made from a single parcel of the vineyard of the same name. Planted in pots in 1910 on calcareous and stony soils of La Seca, this vineyard offers an exceptional raw material for the production of this unique wine.
Its fermentation and aging in 2250 liter French oak vats bring a unique complexity and elegance.
The harvest is done manually, carefully selecting the grapes in the same field. Once in the cellar, a second thorough selection is carried out and cold skin maceration is carried out for 12 hours to extract the maximum aromas and aromatic substances.
Subsequently, the must ferments spontaneously with its own yeasts and it ages on fine lees for 12 months in French oak barrels.
This aging allows a perfect integration of the wood with the fruit, providing spicy and toasted notes that complement the white fruit and aromatic herbs characteristic of Verdejo.< br/>
The vintage marked by extreme drought and heat waves that tested the resistance of the vines. However, thanks to patience and waiting for the September rains, a slow and balanced phenolic maturation was achieved.
This situation gave rise to healthy and concentrated grapes, with a high natural acidity that provides freshness and longevity in the wine.
To the eye, it presents a pale yellow color with greenish reflections, bright and clean.
To the nose , highlights a great aromatic complexity, with notes of ripe white fruit (pear, apple), white flowers (jasmine, chamomile), aromatic herbs (fennel, hyssop) and subtle mineral and iodized touches.
In mouth, it is a wide, voluminous and unctuous wine, with a pleasant entry and a silky mouthfeel.
Its great length stands out, with a persistent and mineral finish reminiscent of wet stone.
L 'acidity is vibrant and balances the sweetness of the fruit, while the salinity brings freshness and complexity.
