Red wines D.O Priorat
The D.O Priorat red wines are made with the Carignan and Grenache red grapes which are the basis of the current reds, but so were the old ones, as these varieties stand out as indigenous varieties. From these two varieties, wisely mixed, garnet reds are born, robust, with a dense and rich flavor, and with an intense aroma. The presence of Syrah, Cabernet Sauvignon and Merlot in varying percentages in some wines, also helps to increase the sumptuous and opulent hue of reds. Its aromas are reminiscent of very ripe fruit, sometimes in jam, and the best are characterized by a marked earthy character that gives abundant mineral notes. As they age, they take on a lot of complexity, and boast of favoring the family's emergence of the aromas of empiric, hydrocarbons, licorice, coffee, cocoa, and spices reminiscent of cloves, nutmeg, cinnamon, and pepper. . In the mouth they have a great character, they are powerful, fleshy, markedly tannic and very persistent, so they require a minimum of five years from harvest for their tannins, powerful and astringent, to be domesticated and the wine to acquire softness and finor.
